A striking, lifted bouquet of wild blackberries, creme de cassis, sweet pepper, forest floor, eucalyptus and violet. The palate is full of dark fruit: jammy blackberries, black cherries and blueberries with an almost meaty edge, yet it remains high-toned with fresh acidity and elegantly framed tannins. A wine with incredible length, purity and depth.
The biodynamically farmed Pinot Noir is hand harvested and fermented with whole-berries, then aged for two years in small, used French oak barrels. All wines from Hiyu are bottled by gravity un-fined and unfiltered.
Sourced from their highest, steepest vineyard opposite Mt. Hood, which is singled out for its incredible altitude coupled with warm southern exposure.
