This Chardonnay is quite Mersault-like, but not in the fashion of the very austere bottling championed today. This is more baroque and has more in common with the wines produced several decades ago in its textural depths. The absence of sulfur heightens all of these sensations making for a hedonistic bottle of white wine.
Pressed in a large wooden basket press where the juices are foot tread prior to a very long, gentle press cycle to free the remaining juice. The wine flows directly to cask by gravity where it aged on the lees, untouched, for just over a year before being bottled without sulfur.
Organically and sustainably grown in the Columbia Gorge in Oregon.
